Abstract

The present invention concerns methods and systems for providing a meat analogue comprising the steps of (i) providing a meat analogue raw mix; (ii) processing the raw mix from step (i) at process conditions comprising an overpressure of e.g. 1-25 bar and a temperature of e.g. 70-125˚C, said process conditions providing a non-meat dough with an exit temperature of e.g. 65-110˚C, wherein 5 the raw mix is subjected to a higher pressure at the start than at the end of the processing step (ii); and (iii) cooling the non-meat dough by the use of a cooling means to a temperature at least 10˚C below said non-meat dough exit temperature to provide the meat analogue; and optionally (iv) providing smaller pieces of said meat analogue, as such slices, stripes, mints, chunks and/or cubes by cutting using a cutter. Furthermore, the invention pertains to meat analogues provided by such methods 10 and/or systems thereto.

Abstract

There is described an inline cutting system comprising an extruder having an outlet, an outlet line connected with the extruder outlet. The outlet line comprises a side wall surrounding an internal passage. Cutting means is arranged in connection with the outlet line. The extruder is arranged for continuously producing a meat analogue product and the extruded string of meat analogue product is cut into meat pieces by the cutting means. The cutting means is extending through the side wall of the outlet line and extends inside said internal passage. The cutting means comprises at least one cutting edge which is pointed in a substantial axial direction of the outlet line in order to establish a cutting in the longitudinal direction of the string of meat analogue product. The extruder and the outlet line forms a closed enclosure upstream of the cutting means.

Abstract

Abstract

An apparatus and a method for sampling from a product flow, where the sampling is performed continuously and where the product is collected in a cup for determining physical conditions, for example, weight in relation to volume, and where the cup is emptied after ending the sampling. The apparatus is provided with at least one sampling cup provided with a filling opening and an emptying opening with different cross-sectional areas. It is not necessary to perform a turning movement of the sampling cup in order to empty it. Instead, preferably, the sampling cup is emptied by opening/uncovering the bottom. Emptying of the cup and subsequent cleaning of the cup are effected with open bottom by passage of the product flow through the cup; but, emptying may also occur in a separate duct.

Abstract

The present invention concerns an apparatus and a method for sampling from a product flow, where the sampling is performed continuously and where the product is collected in a cup for determining physical conditions, for example weight in relation to volume, and where the cup is emptied after ending the sampling. The apparatus according to the invention is provided with at least one sampling cup, where the cup is provided with a filling opening with a cross-sectional area and with an emptying opening with a different cross-sectional area, respectively. It is thus a sampling cup where the product is not emptied through the same opening as the one through which it is filled. An apparatus according to the invention may therefore designed in a simple and reliable way as it is not necessary to perform a turning movement of the sampling cup in order to empty it. Preferably, the sampling cup is emptied by opening the bottom and subsequently cleaning the cup with open bottom. Emptying of the cup is advantageously effected in the product flow, but may also occur in a separate duct for the purpose.
