Abstract

Detection of foreign bodies in food is important to prevent such contaminated products from reaching consumers. Light-weight fibrous foreign bodies such as paper, wood and insects are hard to detect even with traditionally X-ray systems. A dark field X-ray system and method for in-line food scanning in production environments to detect light-weight fibrous foreign bodies comprises an X-ray source for emitting X-rays, a movable object support (3) such as a conveyor belt, optionally a phase grating (5), an analyzer grating (6) where the grating elements of the two gratings may be angled according to each other, a scintillator (7) for converting X-rays into light waves, aspherical lenses (9, 10) and a detector (11) e.g. a camera. Reconstruction algorithms in a processor reconstruct a dark-field image from a number of successively obtained images of the object while this passes the gratings. Light-weight fibrous foreign bodies are easily detected in such dark-field images.

Abstract

Described is a scanning system for determining the presence, positon, length and/or orientation of bones in at least one meat piece while this meat piece is conveyed on a conveyer belt, especially meat pieces with bones located near the surface of the meat piece can be examined in this way. Blue and red light waves are directed towards the meat piece and reflected blue light waves and emitted red light waves are recorded by at least one camera. Processing of the obtained data results in determination of positon of bones in the meat piece. Afterwards a robot can be used to remove the bones from the meat piece, such as for removing ribs from a belly piece e.g. of pork. The scanning system and robot may be integrated in a fully automated system such as a system handling meat pieces at an abattoir.

Abstract

The invention relates to an annular knife (1) with a sensor (5) for determining the cutting depth and a method for determining the cutting depth. When trimming meat such as at abattoirs a customer may require a fat layer of a given thickness, however the natural fat layer of animals vary between different carcasses and within the individual carcass/meat piece. By determining the fat layer thickness and variation hereof of a meat piece before trimming the meat piece an operator may be presented with such information and be able to remove fat in different areas to obtain the required thickness. The trimming may be performed with a system calculating in real time how much fat is to be removed when some fat has already been removed by an operator.

Abstract

When stunning animals e.g. by CO2-stunning aversive reactions may be seen among the animals as a reaction to the high concentration of CO2. To avoid the aversive reactions animals can be pre-stunned before being final-stunned and perhaps killed or slaughtered when stunned. Pre-stunning of animals may be performed with a combination of gas for pre-stunning comprising at least air and/or O2 together with CO2 e.g. in a concentration below 40%, at least air and/or O2 together with N2O, or at least air and/or O2 together with N2O and CO2, where CO2 may bi in a concentration below 40%. For larger animals such as pigs pre-stunning is performed for less than 60 seconds. A stunning system may comprise means for pre-stunning of animals before performing a final-stunning and may include gas storage for re-use of the pre-stunning gas.

Abstract

A rapid method for simultaneously quantifying the amount of compounds related to boar taint such as skatole, androstenone and indole is described. With the reduction in the number of male pigs being castrated, the number of pigs with an amount of compounds related to boar taint above a defined sensorial threshold will increase. The method for simultaneously quantifying the amount of compounds related to boar taint such as skatole, androstenone and indole is based on an extraction of the compounds, desorption of compounds by heating the sample e.g. with a laser; optionally ionizing one or more of the desorbed compounds to produce one or more ions detectable by mass spectrometry; and quantifying the amount of one or more of the ions produced by mass spectrometry. In a preferred embodiment, the method employs laser diode thermal desorption - atmospheric pressure chemical ionization - tandem mass spectrometry (LDTD - APCI - MS/MS). The method makes it possible to obtain results from one sample each 10 seconds and more than 360 samples per hour can be analyzed.
