The invention relates to a particular extract obtained by means of subcritical water extraction from perfume plants, aromatic plants or medicinal plants, comprising both volatile compounds and phenolic compounds. The invention also relates to the method for obtaining said extracts, as well as compositions containing same and the uses thereof.
