Provided is a retort rice production system by which retort rice with good appearance can be continually produced through a simple process starting with raw rice. The retort rice production system comprises: a pressure steamer unit by which raw rice is steam-heated under elevated pressure to form a gelatinized layer on the surface part of the raw rice and make the center part thereof porous; a unit for separating boiled rice into single grains, by which the boiled rice having been treated above is transported by a conveyor and, at the same time, moisture in the surface part thereof is removed to thereby separate the boiled rice into single grains; a quantitative packaging unit by which the boiled rice, which has been separated into single grains, is weighed out per package and then packed in a container; a packaging unit by which the boiled rice is packed in a container and, in addition thereto, at least a liquid, for example, rice-cooking liquid, in an amount required for immersion and water-absorption and a gas for securing sufficient head space are packed in the container holding the boiled rice, followed by sealing; an immersion and water-absorption unit by which the package of the sealed container is rotated in a preset number so as to allow the boiled rice to absorb the rice-cooking liquid; and a retort sterilizer by which the boiled rice, which has absorbed the rice-cooking liquid, is heated to the center part.
A method for manufacturing retort-pouch rice. Said method makes it possible to implement the production process using an assembly line and increases production efficiency by reducing the amount of time taken by a preprocess prior to a retort sterilization process. Said method is characterized in that: uncooked rice is treated by pressurized heated steam, forming a thin gelatinized layer in the surface layer of each rice grain and rendering the center of each grain porous; without being cooled, said rice grains are immediately sealed inside a container together with a prescribed amount of rice-cooking liquid; the rice grains are immersed in and made to absorb the rice-cooking liquid; the water-absorption state of the rice grains and the amount of rice-cooking liquid in the container are adjusted; and retort sterilization is performed.
