Abstract

Provided is a liquid control device that can, with a compact device configuration, adjust an electric field, a magnetic field, an electromagnetic field, or an electromagnetic wave which is generated from electrodes, and perform an effective therapy or treatment. A liquid control device according to one embodiment of the present invention is provided with at least one electrode and a controller that controls at least one of the voltage value, the current value, the frequency, or the phase of a voltage or a current to be applied to the electrode. The liquid control device is characterized in that, in a state where the electrode is disposed so as to face an object unit, the controller adjusts the voltage value, the current value, the frequency, or the phase of the voltage or the current which is to be applied to the electrode, controls an electric field, a magnetic field, an electromagnetic field, or an electromagnetic wave which is generated from the electrode, and, in accordance with the object unit which faces the electrode, performs control on at least one of the output direction of the electric field, the magnetic field, the electromagnetic field, or the electromagnetic wave which is generated from the electrode, and the frequency and the voltage which are applied to the electrode so as to vary over time, or control on the duration in which the voltage is applied to the electrode.

Abstract

Abstract

A fryer (100) generates electromagnetic waves between a pair of opposed plate antennas (102) to control water that is an ingredient in food, specifically, a water activity of an object. The fryer (100) then applies a DC electric field of +100 V as an offset electric field on the water phase side relative to the oil phase in an AC electric field to irradiate the food with electromagnetic waves at a frequency of 50 kHz. Thus, the interfacial polarization between the water phase and the oil phase can be increased to decrease the interfacial tension between the water phase and the oil phase by approximately 60% and bind water in a pearl-chain structure, thus decreasing the water activity.

Abstract

A fryer (100) generates electromagnetic waves between a pair of opposing flat plate antennas (102) to control water as a component in food, specifically the water activity of an object. The fryer (100) irradiates the food with the electromagnetic waves of a frequency of 50 kHz by applying, to an alternating-current electric field and as an offset electric field, a direct-current electric field of +100V on the water phase side with respect to oil phase. In this way, the interface polarization between water phase and oil phase is increased, reducing the interfacial tension between water phase and oil phase by approximately 60%, and the water is coupled in beaded fashion, reducing water activity.

Abstract

[Problem] To improve the taste of deep-fried food and more effectively suppress oil oxidation and degradation by irradiating a food material with radio waves in a fryer radio wave generation device for generating radio waves in an oil tank, and a cooking method using this device. [Solution] A fryer radio wave generation device (2) installed in a fryer for deep-frying a food material housed in an oil tank (11) comprises a pair of sheet electrodes (21, 22) which are disposed with a space therebetween, and an oscillator which passes a high-frequency current through the sheet electrode (21), the pair of sheet electrodes (21, 22) are installed in the oil tank (11) of the fryer (1) so as to be electrically insulated from the oil tank (11), and the sheet electrode (22) is connected to the ground. When the high-frequency current is passed through the sheet electrode (21) from the oscillator, an oscillating current is induced between the pair of sheet electrodes (21, 22) to thereby generate radio waves, and the food material in the oil tank (11) is cooked while being irradiated with the radio waves.
