Abstract

The invention relates to the recycling of fishing industry waste (fish skins) and relates to a method for producing an acetic acid dispersion of macromolecular fish collagen, which can be used for producing medical and cosmetic preparations, and also for producing certain food products. A method for producing an acetic acid dispersion of fish collagen includes cleaning fish skins, grinding same, rinsing same three times using tap water, processing collagen-containing raw material using a 3% solution of acetic acid with a liquid coefficient of 5, keeping in an acidic solution with periodic stirring, and homogenization by filtering through capron fabric. The invention is novel in that the cleaned and ground collagen-containing raw material is first analyzed for moisture, ash and fat content, and is kept in an acidic solution for 15-18 hours, wherein the fish skins used have a moisture content of 58-69%, an ash content of 0.6-0.9%, and a fat content of 1-10%. The technical result of the proposed invention is the production of a macromolecular fish collagen having a predetermined set of properties: a molecular mass of 210-220 kDa, a polydispersity of 1.2-1.5, a fat content of 0.03-0.05%, an ash content of 0.03-0.04%, increased collagen output, and also a decrease in the duration of the technological cycle and in the amount of electricity consumed.
