Abstract

The invention relates to a method and to a device for shucking shell-bearing marine mollusks. The method includes the steps of: transporting a group of mollusks in the liquid stream thereof, against the flow of the stream, toward a shucking unit comprising a striking element (10) for shucking the mollusks of the group in the liquid stream thereof by means of the impact of the striking element (10) and by means of the separation of the flesh (C) from the shells of the mollusks as a result of said striking, wherein the majority of the shells on the one hand, and the flesh (C) containing the remaining shells on the other hand, are discharged separately in respective liquid streams; for the liquid stream of the flesh (C) containing the remaining shells, separating the flesh (C) and the remaining shells and impurities (A, M); and drying the flesh (C) while removing the impurities (A, M) which remain mixed with said flesh (C) by screening, bubbling, microbubbling, and blowing. The invention can be used in the field of processing sea products.
