The technical subject matter of the present invention relates to a method for manufacturing an eco-friendly shoe member capable of being upcycled, and a shoe member manufactured thereby, the method comprising: a first step of mixing a binder and a coffee grounds powder, to prepare a coffee-grounds-binder mixture in a state in which the binder is coated on the surface of the coffee grounds powder; a second step of preparing a coffee-grounds-binder-plant-derived pellet mixture by mixing plant-derived pellets, which are obtained from a plant and are dried, and the coffee-grounds-binder mixture; and a third step of injecting the coffee-grounds-binder-plant-derived pellet mixture into a mold, and then press-forming same to manufacture a shoe member, wherein the shoe member is crushed so as to be upcycled in at least one form from among pellets, granules and lumps.
