According to the microcapsule, first, an internal environment in which moisture and oxygen are isolated is provided by wrapping internal phase grease with a protein, and the survival rate and stability of active substances in a heat treatment process are improved by means of heat absorption in phase change at melting points; then, the wall material is used for further protection, so that the microcapsule has relatively high stability, has relatively strong shear resistance while having high temperature resistance, and also has relatively high acid resistance.

Abstract
The present disclosure provides the use of Lactobacillus paracasei subsp. paracasei K56 in enhancing resistance of the intestinal tract to bacterial infection and improving intestinal immunity. Particularly, the present disclosure provides the use of a Lactobacillus paracasei subsp. paracasei in the preparation of a composition for improving intestinal immunity, wherein the Lactobacillus paracasei subsp. paracasei has a deposit number of CGMCC 15139 or DSM 27447. The present inventors have discovered that this bacteria strain alone can significantly improve the resistance of the intestinal tract to bacterial infection, combat invasion by pathogenic bacteria in the intestinal system, maintain the intestinal barrier function, and/or prevent diarrhea caused by pathogenic bacteria.

The microcapsule for intestinal-targeted release provided by the present invention is of a three-layer wrapping structure, which improves the stability of the functional active ingredient, so that the microcapsule can be applied to a normal-temperature acidic liquid product, can further be wrapped with powder and gum to enrich the taste of the product, and can be released in an intestinal tract, and the release time of the microcapsule in the intestinal tract is 90-120 mins.

The wet material grinding step comprises: grinding and mixing the wet materials with 0.04-0.08 wt% of sodium bicarbonate solution at a weight ratio of 1:3-1:6, grinding at a temperature of 60-65°C, and simultaneously adding two amylases to obtain oat pulp. According to the present invention, the wear degree of a mill can be effectively reduced, the problem of thick taste of a conventional cereal beverage can be effectively solved, and the sweetness of oat primary pulp can be effectively controlled while maintaining the peculiar flavor of oats.

Abstract

The soy milk prepared by the method for preparing soy milk tastes refreshing, and has weak greasiness and beany flavor, good taste, high protein content, low sediment content, and good stability.

Disclosed is a method for preparing soy milk, comprising the following steps: (1) performing a pulp grinding treatment on soybeans to obtain a first pulp grinding material, wherein water is added to the soybeans before the pulp grinding treatment or during the pulp grinding treatment; (2) performing a pulp grinding treatment on the first pulp grinding material to obtain a second pulp grinding material; (3) subjecting the second pulp grinding material to an enzyme deactivation treatment to obtain a first enzyme deactivation product; (4) subjecting the first enzyme deactivation product to solid-liquid separation and collecting a liquid phase product; (5-1) subjecting the liquid phase product to an enzyme deactivation treatment to obtain a second enzyme deactivation product; and (6) continuously stirring the second enzyme deactivation product for 2 to 10 h at 2ºC to 15ºC to obtain soy milk. The soy milk prepared by the method has a good taste, a weak beany flavor, a high protein content, a low precipitate content in the product, and a good stability.
