Abstract

Provided is a technology capable of returning frozen bread to a state close to that of freshly baked bread. The thawing device comprises: a steam generating device for supplying water vapor to the inside of a thawing chamber; a heater for radiating far-infrared radiation onto frozen bread introduced into the thawing chamber; and a microwave radiating device for radiating microwaves into the thawing chamber. When the frozen bread is to be thawed, the steam generating device, the heater, and the microwave radiating device are all operated over an entire time span of a heating time span of 300 seconds, for example. When the steam generating device is operated, gas in the thawing chamber is pressurized above atmospheric pressure.

Abstract

Provided is a technology that makes it possible to return frozen bread to a state that is close to freshly baked bread. According to the present invention, a thawing device comprises a steam generation device that supplies water vapor to the inside of a thawing chamber, a heater that radiates infrared light at frozen bread that has been introduced into the thawing chamber, and a microwave radiation device that radiates microwaves into the thawing chamber. When frozen bread is to be thawed, the steam generation device, the heater, and the microwave radiation device are all run for the entirety of a heating period of, for example, 300 seconds. When the steam generation device is run, the gas inside the thawing chamber is kept at normal pressure while being discharged from the thawing chamber to create a flow of gas inside the thawing chamber.
