CONCENTRATED GRAPE JUICE WITH RICH FLAVOR, AND PRODUCTION METHOD THEREFOR
In the present invention, disclosed is a method for producing a grape juice for which a muscat aroma is emphasized. The method comprises, from among the following steps, a step (a) and a step (b), or step (a), step (b), and a step (c). (a) A step for obtaining skin or a juice which contains skin by crushing grapes and extracting juice from the same. (b) A step for heating a product obtained by adding water to the skin obtained in step (a) or heating the juice which includes the skin, and bringing the same to a temperature of 45-95˚C. (c) A step for, after cooling the mixture obtained in step (b), adding to the mixture an enzyme having glycosidase activity with respect to diglycoside. By using the grape juice produced by this method as a starting material, a wine having a rich muscat aroma can be produced.
The present invention provides a method for producing a fruit wine exhibiting an enhanced muscat flavor, said method including step (a) and step (d), and step (b) and/or step (c), said steps being as follows: (a) a step in which grapes are crushed and juiced to obtain a fruit juice or a fruit-skin-containing fruit juice; (b) a step in which the fruit juice or the fruit-skin-containing fruit juice obtained in step (a) is heated until the temperature thereof reaches a temperature in the range 45-95˚C; (c) a step in which an enzyme exhibiting glycosidase activity is added to the fruit juice or the fruit-skin-containing fruit juice obtained in step (a), when the fruit-juice temperature is in the range 10-55˚C; and (d) a step in which yeast exhibiting β-glucosidase activity is used to ferment the fruit juice obtained in step (b) or step (c). Fruit wine produced using this method exhibits a pleasant muscat flavour.

METHOD FOR PRODUCING CRYSTALS OF VITAMIN D DERIVATIVE
Provided is a method for producing crystals of a vitamin D derivative represented by formula (I), with which the production can be performed economically in a shorter time than the conventional methods. A crude material of the vitamin D derivative represented by formula (I) is dissolved at room temperature in a carboxylic acid (acetic acid or propionic acid), wherein 10 to 50 ml of the carboxylic acid is used per gram of the crude material, and further an appropriate poor solvent (a hydrocarbon or water) is added thereto, thereby depositing crystals of the vitamin D derivative. Subsequently, the deposited crystals are filtered off and dried, thereby obtaining high-purity crystals of the vitamin D derivative. The target crystals can be obtained in high yield in a shorter time than the conventional methods.

Disclosed is a means for improving the poor conversion efficiency in a conventional bioconversion using a transformant having a gene derived from a heterogeneous organism integrated therein. Abstract
A vitamin D3 hydroxylase is purified from a cultured Pseudonocardia autotrophica cell, and a primer is designed based on the information on amino acid sequence for the hydroxylase. Subsequently, PCR is conducted using genomic DNA of Pseudonocardia autotrophica as a template to clone a gene for the vitamin D3 hydroxylase. By conducting a conversion reaction using a microorganism in which the gene is expressed using a proper expression system, a hydroxide of vitamin D or the like (e.g., hydroxy vitamin D3) can be produced with high efficiency.
An object is to establish a process for production of a novel polysaccharide from a cassis polysaccharide (CAPS), wherein the novel polysaccharide can show a higher immunomodulating effect per unit amount, has a low viscosity, and can be handled readily during the process for producing a final product. Another object is to provide a health beverage/food having high safety and an excellent immunomodulating effect at a low cost by utilizing a juice, a processed juice or a purified product. Thus, disclosed is a composition mainly comprising a novel polysaccharide having an average molecular weight of about 10,000 to 40,000, wherein the polysaccharide is produced by a restrictive and partial enzymatic digestion of a CAPS.
