The assembly includes a plate defining a product opening therein, and a texturing unit coupled to the plate and including a plurality of projections extending therefrom into the product opening to form indentations in comestible product positioned in the product opening. The machine also includes a knock-out mechanism adapted to engage comestible product positioned in the product opening in order to dislodge the comestible product from the product opening. The assembly is moveable between a first position, in which comestible product is adapted to be introduced into the product opening from the product hopper, and a second position, in which the knock-out mechanism is adapted to engage the comestible product positioned in the product opening.
Orifice plates, grinding machines, and method of using the same are provided that can process a material. In one aspect, an orifice plate includes multiple orifices, at least one of which has two tapered segments aligned with and operably connected to each other and that taper downwardly from respective outer portions to inner portions. An intermediate bore may connect to minimum diameter portions of each of the tapering segments so that the tapering segments are connected to each other by way of the intermediate bore.
An automated casing removal system for removing the casing of encased food products supported on a support frame. An inclined surface on the support frame has a staging area onto which encased food product is loaded. The staging area has a cutting member moveable along a portion of the length of the staging area, and a stop mechanism downstream from the cutting member on the inclined surface. The stop mechanism extends within a plane which intersects the inclined surface to prevent the food product from moving down the inclined surface. The staging area has retaining member upstream of the stop mechanism which retains the casing to unravel the casing from the food product as the food product rolls down the inclined surface when the stop mechanism is removed.
Separation chambers, deboning machines, and methods of operating the same are provided. In one aspect, a separation chamber for a compression-type deboning machine includes a body defining an internal cavity therein having a frusto-conical shape. A central longitudinal axis of the body extends from a first opening of the cavity near a first end of the body to a second opening of the cavity near a second end of the body. The first opening is larger than the second opening. The separation chamber also includes a plurality of perforations defined through the body from an inner surface of the body to an outer surface of the body. Each perforation includes a perforation axis extending longitudinally through a center of the perforation. The perforation axes of the plurality of perforations are transverse to a radial axis extending perpendicular to the central longitudinal axis of the body.
Deboning machines and methods of operating deboning machines are provided. In one aspect, a deboning machine includes a housing, a bearing supported by the housing, a separation chamber supported by the housing and including perforations defined through the separation chamber from an interior surface to an exterior surface, an auger including a shaft and a flute formed about the shaft with the auger extending through the separation chamber and the flute adapted to be positioned a working distance from the interior surface of the separation chamber. The deboning machine also includes a retainer rotatably supported by the bearing with the auger extending through the retainer, a nut rotatably coupled to a threaded portion of the auger and rotation of the moves the flute relative to the separation chamber to establish the working distance between the flute and the interior surface of the separation chamber.

A web accumulation station is between the drawing station and the feed station to provide a slackened length of web material within an acceptable range of slack between the drawing station and the feed station. The supply of web material is disposed on a spool which rotates about a cylindrical shaft. Food articles are loaded onto a lift tray and raised to a staging position where food articles are in contact with a food article gate. The lift tray is located inline with the food article feed paths such that lateral shifting of food articles into the feed paths is not needed. Food article grippers, individually driven along feed paths by an overhead conveyor, move food articles over the food article gate towards the slicing station. A method for weighing sliced products to generate product batches of a pre- determined weight. A slicer slices products which are disposed onto a slice scale located beneath the output end of the slicer. An intermediate weight is measured at a pre-determined point in the slicing process. The intermediate weight information is used to calculate the minimum number of completion slices, based on thicknesses of the slices, needed to meet the target weight. The competed draft is transferred to a check sale where a final draft weight is measured and compared to a sum of the intermediate weight and the weight of the completion slices. Comparison of the weight is used to adjust slicing parameters for more precise targeting of the desired weight of the next draft. Completion slices may be adjusted in thickness to minimize the giveaway weight.
A card dispensing system for dispensing cards along a conveying surface which conveys sliced products downstream of a slicer for packaging the sliced products. A hopper contains a stack of cards which are withdrawn from the hopper by a suction force provided via at least one suction cup. The suction cup is moveable vertically to retrieve and remove the card from the hopper. The suction cup is moveable laterally to move the card into a receiving position where a card clamp on a clamp carriage arrives to receive the card. Suction force on the card is released when the card clamp clamps down on the card. The clamp carriage moves the card from the receiving position to the staging position where a nip engages with the card to feed the card through a junction in the conveyor line just as a food product passes over the junction.
An apparatus for acquiring a profile of a food product for use in subsequent processing of the food product includes a scanning area and one or more product drives for driving a product through the scanning area in a longitudinal direction. A food patty molding machine has a reciprocating mold plate. A fill plate, interposed in the fill passage immediately adjacent the mold plate, has a multiplicity of fill orifices throughout an area aligned with the mold cavity when the mold plate is in its fill position.
