An interfolding machine (1) for producing stacks (100) of sheets interfolded according to a predetermined interfolding configuration, starting from at least one web (50) of paper, or similar products, comprises an advancement section (10), which carries out the tensioning and the unwinding of the web (50) along a predetermined advancement path (101) for feeding the same to a cutting section (20), where the web of paper (50) is divided in a series of sheets (11) of predetermined length, at a cutting point positioned between a cutting roll (25) and a counter-cutting device (27). Downstream of the cutting section (20) an interfolding section (30) is provided comprising a first folding roll (31) and a second folding roll (32) counter-rotating to each other. The first and second folding rolls (31,32) are adapted to rotate about a respective rotation axis (131, 132), and are configured to fold, at a folding zone (35), the aforementioned plurality of sheets (11) in a plurality of panels and to form a stack (100) of interfolded sheets. A threading group (200) is, furthermore, provided to engage a wing (51) of the or each web of paper (50) during a threading step preceding the production step and to cause the same to move along a predetermined threading path (105).
