The present invention provides a novel method which enables marbling inspection that can produce almost the same results as those produced in an inspection by human eyes even in a carcass having a relatively high fat area ratio regardless of the level of the fat area ratio. The present invention relates to a method for inspecting the marbling in a cross section of an edible meat, which comprises: extracting a rib eye in a digital image of a transverse cross section of the edible meat; separating the rib eye into a muscle and a marbling part in the obtained digital image of the rib eye; calculating a fat area ratio which represents the ratio of the area of the digital image of the marbling part to the area of the digital image of the muscle; calculating a fineness index of marbling from the image of the marbling part by dividing the sum total of the boundary lengths of marbling particles by the square root of the area of the rib eye; and then evaluating the marbling on the basis of the fat area ratio and the fineness index.
